This is one of my favorite recipes , ever!
It's very tasty, healthy, easy to make and done in 20 minutes. Really good for when you get surprised with a friends visit and that friend is hungry and you're not in the mood to go out for a dinner and you are, like, really good friend and want to cook for someone instead ordering some pizza.
I actually cook this dish often, just because it's not time consuming.
It goes well with fresh pasta or rice.
Ingredients:
0.400 kg Chicken breast, or two medium pieces
0.050 olive oil
0.50 grams butter
garlic 4 cloves
0.700 kg fresh spinach
0.400 liter cooking cream
Salt, pepper and nutmeg as needed
Procedure:
Cut chicken breast in cubes.
Cook fresh spinach in boiling water for one minute. Transfer in the bowl with cold water. This way it softens, loses in volume and it's color stays green. When cooled down mince it finely.
Peel and crush garlic cloves. You can mince them if you prefer, I leave them just like that crushed.
Heat up the olive oil in the deep pan and melt the butter, ad garlic put chicken breast on it and cook for 7 minutes, add minced spinach and spices and cook for next 3 minutes. You want all the juices and spices to integrate. Add cooking cream bring to boil and let it boil for next 4 minutes, than reduce heat to medium and cook for next 5 minutes.
In the mean time you have enough time to cook your garnish, pasta or rice.
