If there is one thing that brings back the memories from my childhood, that's for sure the smell of Scampi Alla Busara!
Growing up at the seaside there was no way you wouldn't feel that divine smell all over the neighborhood.
It's traditional Adriatic dish. Very simple to make and they say it's one of fishermen favorite meals.
I personally just love that taste of pure freshness in my mouth whenever I eat it and I don't mind at all cooking it for myself of for a dinner with my friends. Seriously it takes me up to 30 minutes to cook this deliciousness.
So this is how I have been cooking shrimp for over twenty something years.
It's important to have a lot of garlic and parsley and cook it only in white wine.
INGREDIENTS:
400 grams shrimp
100 milliliters olive oil
20 grams bread crumbs
4 cloves garlic
A handful parsley chopped
4 tomatoes
200 milliliters white wine
Salt and pepper for seasoning
PROCEDURE:
Wash the shrimp.
Boil the water and cook the tomatoes in it for 30 seconds, this will make it easy for you to peel the skin off. When peeled cut the tomatoes in cubes.
Heat up the oil, and fry the bread crumbs to light golden color, add crushed garlic, parsley and tomato, bring to boil than season with salt and pepper, pour the wine in, stir and add shrimp in. Cook for 15 minutes with a lid on.
I usually serve this dish with polenta, homemade corn bread (Proja), or with simple garlic baguette.
